As part of a new on board take-out concept Stena approached Sovereign to see how we could help them update the food offering on one of their key routes. They asked for a way to get away from the traditional breakfast buffet with ceramic plates and silver cutlery and move to a more modern approach. The menu was to be similar but they wanted a faster way of serving a traditional breakfast served in disposable packaging to reduce the costs involved with washing up and breakages and speed up service.
Working with one of our key partners we were able to develop a breakfast tray that could take bacon, sausage, fried tomato, scrambled egg, baked beans and a slice of toast and can be kept hot under a warmer for up to 20 minutes. This allowed the breakfast to be pre-prepared in the kitchen and served quickly at the counter. We were also able to personalise the box to match the look and feel of the new concept restaurant.
